When it comes to nutrition, some people say you are what you eat. So what do you eat to stay young?

Biotech entrepreneur Bryan Johnson is spending up to $2 million a year on an intensive regimen called Project Blueprint in an attempt to reverse his age. (He's 46.) And as part of Project Blueprint, he eats a strict plant-based diet that includes a mix of solid and soft foods.

The centi-millionaire amassed most of his fortune by founding the payments processing company Braintree and selling it to eBay for $800 million in 2013.

But he admits that he also made some poor health decisions over the years — including binging on carbs and sugar late into the night. So, in 2019 he began making changes to his lifestyle,

Nowadays, Johnson usually starts off his days with a "Green Giant" smoothie chock full of supplements. For lunch, he might have a bowl packed with vegetables. And for dessert, he'll have a fruit-and nut pudding.

All in all, he takes in about 1,977 calories a day, he said.

Johnson and his team of health experts designed the recipes in his diet by asking "the body what it needed," Johnson told Business Insider by email. "Every calorie had to fight for its life."

None of the ingredients in his diet are simply "convenient or cool or trendy," but ostensibly are doing work for his body, he also explained in a video on his YouTube channel.

The recipes have helped him stop craving junk food, he's previously said.

Aside from his diet, Johnson takes dozens of supplements, exercises daily, and goes through regular medical screenings, including blood tests and MRIs. His quest for youth has even led him to a remote Caribbean island for $25,000 per-dose injectable gene therapy.

Johnson and his team of doctors have said that Project Blueprint has helped him achieve the skin of a 28-year-old, the heart of a 37-year-old, and the lung capacity of an 18-year-old. These claims of course haven't been independently verified — and there's fierce debate on what exactly "biological age" even is.

Johnson recently posted step-by-step videos for a couple of his favorite recipes that he claims are anti-aging on his YouTube channel.

Johnson has a 'Super Veggie' bowl for lunch

The "Super Veggie" is a good way to get vegetables and can be made in under 20 minutes, Johnson said in a video where he shared how to prepare it.

It's a bowl of cooked black lentils topped with boiled broccoli, cauliflower, and mushrooms, alongside spices, aromatics, and healthy fats. 

Johnson said it can take him up to 34 minutes to eat the 'Super Veggie,' so when he's pressed for time, he opts for a blended version.

And since Johnson only eats between the hours of 6 a.m. and 11 a.m., he's usually having his lunch around 8 a.m.

He has 'Nutty Pudding' for dessert

Johnson is on a pretty strict diet (by most people's standards, but he still leaves room for dessert.

He often has something called a "Nutty Pudding," which is a blend of ground nuts, fruits, plant-based milk and pomegranate juice, he explained in a video detailing how he makes it. He tops the blended pudding with chia seeds, pea protein, and more berries.

And he said the "saddest moment" of his day is his last bite of Nutty Pudding — usually around 11 a.m.
